Grilled Goat Cheese Pizza with Grilled Romaine & Grape Salad
Ingredients
1 lb. pizza dough (I get mine from the Publix Bakery)
8 oz. shredded Mozzerella Chese
8 z. crumbled Goat Cheese
2 heads Romaine Lettuce
2 bunches Red Grapes (still on stems)
1 bunch Asparagus (trimmed)
1/2 fresh lemon
1/4 c chopped Parsely
Parmesan Cheese
Olive Oil
Salt
Pepper
Start grill and allow to heat up. Divide dough into two balls and flatten. They don't need to be perfect, in fact I like the rustic look. Brush dough with olive oil and place oil side down on grill. Brush other side close grill and allow to cook about 15 min (keep an eye on the so they don't burn.
While that is cooking toss the grapes and asparagus with a bit of olive oil, place on grill and cook approx. 10 minutes. Remove from grill, take grapes off stems and cut asparagus into 1 in pieces on the diagonal, place in salad bowl and set aside.
Brush other side of dough with olive oil and flip. Sprinkle with salt and pepper to taste, shredded mozzarella cheese, goat cheese, and parsely. Close lid and cook about 5 more minutes till bottom of dough is browned and crisp. While dough is crisping toss Romaine leaves in olive oil and set aside.
Remove pizza from grill allow to sit while you cook the Romaine. Place Romaine on bottom rack of grill keep turning so it doesn't burn. This will not take long remove to cutting board and give a rough chopped. Toss into bowl with asparagus and grapes. Add lemon juice, salt, pepper, a bit of goat cheese and toss well. Now grab your family and eat.
